Roasted Baby Red Potatoes with Thyme

These tasty baby reds are a perfect accompaniment to any meal.

 

1lb of baby red potatoes, halved

a few sprigs of fresh thyme

salt & pepper, a palm full

a couple tablespoons of extra virgin olive oil

 

1. Preheat oven to 375 degrees.

2. Combine ingredients in a bowl and toss to coat.

3. Place a layer of potatoes on a sheet pan and roast until tender and golden brown.
